Taste Note: Complex mix of aromas, including hints of smoked meat, peppery herbal notes, and vibrant blueberry fruit. Impressive notes of blueberries, violets, lilac, and hints of chocolate on the nose.
Winemaking Process: Hand harvesting at optimum ripeness. One-third of whole bunches, two-thirds destemmed without crushing. Natural fermentation. Light pump-overs and punch-downs during 4 weeks of maceration. In 2000 liters oak barrel and 1600 liters concrete egg tank during 20months without racking of the lees. Bottling with no fining or filtration. 6 months of bottle aging before release.
Sommelier Advice: Roasts, game in sauce, blue cheese, gourmet salads (giblets, liver), chocolate desserts, etc.
